(And Why It Matters More Than You Think)
Most people focus on the beans. Some focus on the grind. A few even dial in their brew method.
But almost everyone overlooks the one ingredient that makes up nearly the entire cup—water.
Water accounts for about 90% of espresso and up to 98% of a standard cup of coffee. That means even the best beans in the world can fall flat if your water isn’t right.
If your coffee tastes amazing at a café but disappointing at home, there’s a good chance your water is the reason.
What Water Actually Does in Coffee
Water isn’t just a base—it’s a solvent.
When you brew coffee, water pulls flavor compounds out of the grounds and carries them into your cup. The way it does that depends heavily on what’s inside the water itself.
Key minerals like:
- Calcium
- Magnesium
- Potassium
…directly affect how flavors are extracted.
Too little mineral content, and your coffee tastes weak and flat.
Too much, and it becomes bitter, heavy, or muddled.
The 4 Things That Control Your Water Quality
1. Total Dissolved Solids (TDS)
TDS measures how much is dissolved in your water (minerals, salts, etc.), usually in parts per million (ppm).
- Ideal range: ~150 ppm
- Below 75 ppm → weak, under-extracted coffee
- Above 250 ppm → harsh, over-extracted flavors
TDS doesn’t tell you what minerals are present—but it gives a strong starting point.
2. Water Hardness
Hardness comes from calcium and magnesium.
- Moderate hardness → best flavor extraction
- Too hard → bitter taste + scale buildup in machines
- Too soft → flat, lifeless coffee
Balance is everything.
3. Alkalinity (pH Balance)
Alkalinity controls how water handles acidity.
- Low alkalinity → coffee tastes sharp or sour
- High alkalinity → flattens flavor, removes brightness
Ideal pH range:
- 6.5 – 7.5
A good target is about a 2:1 ratio of hardness to alkalinity for balanced flavor.
4. Chlorine
Chlorine and chloramine are added to tap water for safety—but they can ruin coffee.
Even small amounts can cause:
- Bitter or chemical taste
- Poor extraction
The good news? Most filters remove it easily.
Types of Water

Filtered Water (Best Overall)
This is your safest and most reliable option.
- Removes chlorine and impurities
- Keeps beneficial minerals
- Improves consistency
If you do nothing else—start here.
Tap Water (Hit or Miss)
Depends on where you live.
- Can contain chlorine and unwanted chemicals
- Mineral levels vary widely
If your coffee tastes inconsistent, your tap water is likely the issue.
Distilled Water (Avoid Alone)
- Almost zero minerals
- Produces flat, under-extracted coffee
It can actually pull minerals out of your equipment over time.
Only use it if you remineralize it first.
Reverse Osmosis (RO) Water
- Very clean, but stripped of minerals
Like distilled water, it needs minerals added back to be useful for coffee.
Bottled Water
- Spring water = good option
- Avoid “purified” or RO-based bottles
Look for naturally balanced mineral content.
Alkaline Water
- Higher pH (8–9)
- Can mute acidity and flatten flavor
Works, but not ideal if you want full flavor clarity.
What the “Perfect” Coffee Water Looks Like
For consistently great coffee, aim for:
- Chlorine-free
- ~150 ppm TDS
- ~40 ppm alkalinity
- Balanced mineral content
- Brew temperature: 195–205°F
This gives you clean, balanced extraction across most brewing methods.
Water for Coffee vs Espresso Machines
Drip / Pour Over
- Filtered water is usually enough
- Watch for hard water buildup over time
Espresso Machines
More sensitive and more expensive to maintain.
Avoid:
- Hard water (causes scale buildup)
- Unfiltered tap water
Better options:
- Remineralized distilled or RO water
- Balanced mineral blends
Don’t Forget Maintenance
Even with good water, minerals build up over time.
Descale regularly:
Drip Coffee Makers
- Run a 1:1 mix of water and vinegar
- Pause halfway, then finish
- Rinse with clean water (2–3 cycles)
Espresso Machines
- Follow manufacturer guidelines
- Use proper descaling solutions when possible
